These African chocolate cookies are formed in a muffin tin before baking so they can be shaped according to individual taste.
 

Ingredients

  • 2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 1 1/2 cups firmly packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract/essence
  • 1 large egg + 1 large egg yolk
  • 1 teaspoon baking soda dissolved in 1 tablespoon hot water
  • 1 1/4 cups semisweet dark chocolate chips

Directions

  1. 1. Butter and flour two 12 cup muffin pans (or line them with foil or paper baking cups).
  2. 2. Sift the flour and salt into a medium bowl.
  3. 3. Beat the butter and both sugars in a large bowl with an electric mixer at high speed until creamy. Add the vanilla, egg and egg yolk, beating until just blended. Beat in the baking soda mixture followed by the dry ingredients. Stir in the chocolate chips.
  4. 4. Spoon the cookie dough evenly into the prepared cups and refrigerate for 30 minutes.
  5. 5. Preheat the oven to 350 degrees F.
  6. 6. Bake for 15 to 18 minutes or until firm. Let cool completely in the pans.
