Ingredients

  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 6 tablespoons butter, softened
  • 1/3 cup brown sugar, firmly packed
  • 1 large egg, lightly beaten
  • 1 teaspoon almond extract/essence
  • 8 cardamom pods, crushed
  • 1/2 cup candied cherries, chopped fine
  • 1/2 cup dried apricots, chopped fine
  • 1/2 cup crystallized ginger, chopped fine

Directions

  1. 1. Preheat the oven to 350 degrees F. Prepare two cookie sheets with cooking spray.
  2. 2. Sift together the flour, baking powder and salt into a medium bowl.
  3. 3. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy. Add the egg, beating until just blended.
  4. 4. Mix in the dry ingredients, almond extract, crushed cardamom, cherries, apricots and ginger.
  5. 5. Drop rounded teaspoons of the dough one inch apart on to the prepared cookie sheets.
  6. 6. Bake for 20 to 25 minutes or until lightly browned. Transfer to wire racks and let cool.
