Ingredients

  • 225 grams almonds
  • 1 egg white
  • 690 sugar
  • 295 ml water
  • A pinch of cream of tartar
  • Almond essence

Directions

  1. 1. Noodles
  2. 2. Blanch and grind almonds using a little egg white.
  3. 3. Make a sugar syrup. Clear with egg white.
  4. 4. Add cream of tartar and then boil to 113°C (235°F approx.)
  5. 5. Put in ground almonds and cook till thick.
  6. 6. Remove and grind well again.
