Fabulous main dish.
 

Ingredients

  • 4 gammon steaks
  • 10 ml/2 teaspoon dijon mustard
  • 225 g/8 ounces/1 small can of pineapple slices, drained
  • 30 ml/2 tablespoon chopped gherkins (cornichons)
  • 4 slices of emmenta (swiss cheese)
  • 1 tomato, sliced
  • Sauté Potatoes and peas, to serve

Directions

  1. 1. Preheat the grill (broiler). Snip the edges of the gammon with scissors. Place on foil on a grill rack.
  2. 2. Grill (broil) the gammon for 4 minutes on each side. Cook the peas now.
  3. 3. Spread each slice of gammon with Dijon mustard, then top with a slice of pineapple and place the chopped gherkins in the holes in the centres. Lay a slice of cheese over, then a slice of tomato.
  4. 4. Grill until the cheese melts and bubbles and the fruit is hot. Serve with the sauté potatoes and peas.
