No need to worry about the moistness of a cake when it has preserves mixed into the batter. This unique variation of an apple cake is yours for the baking.
 

Ingredients

  • 2 cups sifted cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 3/4 cup shortening
  • 1 cup sugar
  • 1/4 cup sour cream
  • 1/2 cup apple preserves
  • 3 eggs
  • 1/2 cup walnuts, chopped
  • 1/2 cup seedless raisins

Directions

  1. 1. Preheat oven to 350 degrees F.
  2. 2. Combine flour, baking soda, baking powder, salt, cinnamon, nutmeg and allspice then sift.
  3. 3. Cream the shortening with the sugar, mixing until fluffy. Add sour cream and apple preserves, mixing well. Add eggs, one at a time, beating hard after each is added. Gradually add sifted dry ingredients, beating well then fold in nuts and raisins.
  4. 4. Pour into greased loaf pan and bake for 50 minutes.
  5. 5. Remove from oven and sprinkle the top with powdered sugar. Serve warm or cold.
