Ingredients

  • 2 cooking (tart) apples
  • 40 g/1 1/2 ounces/3 tablespoon granulated sugar
  • 2.5 ml/ 1/2 teaspoon ground cinnamon
  • 45 ml/3 tablespoon sultanas (golden raisins)
  • 4 sheets of filo pastry (paste), thawed if frozen
  • 25 g/1 ounce/2 tablespoon butter or margarine, melted
  • 15 ml/1 tablespoon icing (confectioners') sugar

Directions

  1. 1. Peel, core and thinly slice the apples and mix with the sugar, cinnamon and sultanas.
  2. 2. Lay a sheet of filo on a clean cloth or piece of greaseproof (waxed) paper and brush very lightly with butter or margarine. Lay a second sheet on top and brush again. Repeat with the remaining two sheets, so you have a stack of four.
  3. 3. Spoon the apple mixture along the length of the pastry, just in from the edge.
  4. 4. Using the cloth or paper to help, roll the pastry over the filling to form a sausage shape.
  5. 5. Preheat the oven to 190°C/375°F/ gas mark 5.
  6. 6. Brush a baking (cookie) sheet with some of the remaining butter or margarine. Carefully lift the strudel and place on the sheet in a horseshoe shape.
  7. 7. Brush with any remaining butter or margarine. Bake in the oven for about 20-25 minutes or until the pastry is golden and the apple is cooked.
  8. 8. 8. Put the icing sugar in a sieve (strainer) and sprinkle it over the surface. Serve warm.
