A wonderful blend of tastes and textures, this oriental chicken salad is easy to prepare and makes an excellent lunch.
Ingredients
- For the dressing:
- 3 tablespoons honey

- 1 1/2 tablespoons white vinegar

- 4 teaspoons mayonnaise

- 1 tablespoon dijon mustard

- 1/8 teaspoon sesame oil

- To cook the chicken:
- 2 to 4 cups vegetable oil for frying

- 1 egg

- 1/2 cup milk

- 1/2 cup all purpose flour

- 1/2 cup cornflakes, crushed

- Salt and black pepper to taste

- 1 half boneless, skinless chicken breast

- For the salad:
- 3 cups romaine lettuce, chopped

- 1 cup red cabbage, chopped

- 1 cup napa cabbage, chopped

- 1/2 carrot, julienne or shredded

- 1 green onion, sliced

- 1 tablespoon almonds, sliced

- 1/3 cup chow mein noodles
