A creamy pie made-up of apricots.
 

Ingredients

  • 1 cup cooked apricot pulp
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 3 tablespoons cornstarch
  • 1/2 cup cold milk
  • 1 1/2 cups scalding milk
  • 3 egg yolks
  • 1 1/2 teaspoons vanilla
  • 1 baked pastry shell
  • 1 recipe meringue iii

Directions

  1. 1. Mix sugar, salt and cornstarch together, add cold milk and blend.
  2. 2. Add scalding milk gradually and cook in top of double boiler, stirring constantly until mixture thickens.
  3. 3. Beat yolks until light and pour a small amount of the hot mixture over them, stirring rapidly.
  4. 4. Return to remaining mixture in top of double boiler and cook 4 minutes longer. Add vanilla and cool.
  5. 5. Pour into pastry shell, cover with meringue, sealing in custard, and bake.
