Here is an apricot filling that can be used to fill cakes or other desserts.
 

Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup sugar
  • 1 cup water
  • A pinch of salt
  • 2 tablespoons lemon juice
  • 1/2 teaspoon almond extract

Directions

  1. 1. Cook apricots, water and sugar over low heat, stirring frequently, until the apricots have absorbed most of the liquid.
  2. 2. Blend the apricots with salt, lemon juice and almond extract. Let it cool and keep it refrigerated.
