- 1 green bell pepper; stemmed, seeded and chopped

- 3 tomatoes, cored and chopped

- 5 cups chicken stock

- 2 tablespoons drained capers

- 1/4 cup green olives, pitted

- 1 cup long grain rice

- 1/4 cup frozen green peas

- 1/4 cup roasted red peppers (or canned pimientos)
