Asparagus Pecandine

Pecandine is the sauce served with asparagus.
 

Ingredients

  • 5 tablespoons butter
  • 1/2 cup chopped pecans
  • 1 1/2 teaspoons tarragon vinegar
  • 1 pound asparagus, steamed just until tender-crisp

Directions

  1. 1. Melt the butter in a heavy skillet over medium-high heat Stir in the pecans and sauté, stirring frequently, for 5 to 7 minutes, or until the pecans are golden and crisp through.
  2. 2. Stir in the tarragon vinegar.
  3. 3. Place the asparagus on serving plates, and spoon the sauce over it. Serve immediately.
