Simple appetizer made from abergine.
Ingredients
- 1 large aubergine (eggplant)

- 1 spring onion (scallion), very finely chopped

- 1 small garlic clove, crushed

- 2 large ripe tomatoes, skinned, seeded and chopped

- 45 ml/3 tablespoon olive oil

- Lemon juice, to taste

- Salt and freshly ground black pepper

- 15 ml/1 tablespoon chopped fresh parsley

- 2 carrots, cut into matchsticks

- 1/4 cucumber, cut into matchsticks

- 1 red (bell) pepper, cut into thin strips

- 16 whole tiny button mushrooms
