Ingredients
- 2 aubergines (eggplant)

- 2 red (bell) peppers

- Vegetable oil for deep-frying

- For the tempura batter:
- 250g/9 ounces/2 1/4 cups plain (all-purpose) flour

- 2 egg yolks

- 500ml/17 fluid ounces/2 1/4 cups iced water

- 5ml/l teaspoon salt

- For the dip:
- 150ml/ 1/4 pint/2/3 cup water

- 10ml/2 teaspoon granulated sugar

- 1 fresh red chilli, seeded and finely chopped

- 1 garlic clove, crushed

- Juice of 1/2 lime

- 5ml/l teaspoon rice vinegar

- 35ml/2 1/2 tablespoon thai fish sauce

- 1/2 small carrot, finely grated
