This salad goes well with drinks.
 

Ingredients

  • 1 avocado
  • 2 tablespoons lemon juice
  • Salt
  • Watercress, romaine or lettuce
  • 2 cups avocado balls or cubes
  • 1/2 cup appetizer mayonnaise

Directions

  1. 1. Cut avocado crosswise into halves and remove seed.
  2. 2. Slice 2 rings from each half and peel.
  3. 3. Sprinkle with lemon juice and salt, arrange on watercress, and fill rings with avocado balls.
  4. 4. Serve with the mayonnaise.
  5. Use 1 cup avocado balls and any of the following:
  6. 5. 1 cup diced asparagus tips.
  7. 6. 1 cup diced tomatoes and cucumber.
  8. 7. 1/2 cup diced lobster, shrimp or crab meat and 1/2 cup chopped celery.
  9. 8. 1/3 cup shredded anchovies, 1/3 cup pearl onions, and 1/3 cup chopped celery.
  10. 9. 1/2 cup diced pickled beets and 1/2 cup pickled onions.
  11. 10. Use Frozen Tomato Mayonnaise instead of the Appetizer Mayonnaise,
