A twist on the ubiquitous bacon, lettuce and tomato sandwich; this open face bacon and tomato rarebit sandwich recipe produces a tasty and satisfying lunch.
 

Ingredients

  • 1 tablespoon butter
  • 1/2 pound american cheese
  • 1 teaspoon prepared mustard
  • 1 teaspoon worcestershire sauce
  • 3/4 cup milk
  • 1 egg, well beaten
  • 8 slices toast
  • 2 tomatoes, sliced
  • Salt and black pepper to taste
  • 8 slices cooked bacon

Directions

  1. 1. Melt butter over low heat, add cheese and stir until melted. Add mustard and Worcestershire sauce; mix well.
  2. 2. Stir in milk slowly, remove from heat and pour over egg, beating constantly.
  3. 3. Cut one piece of toast diagonally; place the two pieces on each side of a whole slice of toast on a plate.
  4. 4. Place two slices of tomato on the toast, sprinkle with salt and pepper, cover with rarebit sauce and top with two pieces of bacon. Repeat for additional servings.
