Baked Meringue Spice Cake

A variation on a southern stack cake, this spice cake, meringue and peach layered cake is a show stopper when seen and tasted.
 

Ingredients

  • For a 4 layer cake double these ingredients:
  • 2 cups sifted cake flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves, ground
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 2 eggs
  • 3/4 cup milk
  • For the meringue:
  • 4 egg whites
  • 1 pinch cream of tartar
  • 2 tablespoons sugar
  • Whipped cream for assembling the cakes.
  • Sliced peaches (or other fruit) to cover meringue

Directions

  1. 1. Preheat oven to 350 degrees F.
  2. 2. Note: For a four layer cake like in the picture, dpouble the recipe and bake the cake rounds two at a time in the oven. Otherwise, proceed as written for a two layer cake.
  3. 3. Mix flour, baking powder, salt, cinnamon and ground cloves, sift thoroughly.
  4. 4. Cream shortening with sugar until fluffy. Add eggs and whisk completely.
  5. 5. Add sifted dry ingredients alternately with milk in small amounts, beating well after each addition.
  6. 6. Divide the batter evenly between two greased 8 inch round cake pans. Set aside while you make the meringue.
  7. To make the meringue:
  8. 7. Place egg whites and cream of tartar in a bowl. If you have a stand mixer use the whisk attachment. Beat egg whites until soft peaks form and then gradually add sugar; continue beating until stiff peaks form, approximately 1 to 2 minutes.
  9. 8. Spread the mixture evenly over the top of the two cakes and bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool on a wire rack. When completely cool remove from pans.
  10. 9. Place one of the cakes on a serving platter with the meringue side up. Spread whipped cream evenly over the cake and then add a layer of sliced peaches.
  11. 10. Place the second cake, meringue side up, onto the first layer. Spread whipped cream and then peaches.
  12. 11. For additional layers, repeat.
  13. 12. Keep refrigerated until ready to serve.
