With a little more sugar and leavening, here's the older sibling to banana bread.
 

Ingredients

  • 2 1/4 cups all purpose flour
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas (about 3)
  • 3/4 cup buttermilk or sour milk
  • 1/2 cup shortening
  • 1 teaspoon vanilla
  • 2 eggs
  • Powdered sugar for topping

Directions

  1. 1. Grease and lightly flour two 8 x 1 1/2 inch or 9 x l 1/2 inch round baking pans or grease one 13 x 9 x 2 inch baking pan and set aside.
  2. 2. In a large mixing bowl stir together flour, sugar, baking powder, baking soda and salt. Add bananas, milk, shortening and vanilla. Beat with an electric mixer on low speed till combined. Add eggs; beat on medium speed for 2 minutes.
  3. 3. Pour batter into the prepared pan(s). Bake in a 350 degree F oven for 25 to 30 minutes for round pans or about 35 minutes for rectangular pan or until a wooden toothpick comes out clean.
  4. 4. Cool the cakes in their pan(s) on wire racks for about 10 minutes then remove them from the pan(s), return them to the rack and cool thoroughly.
  5. 5. Sprinkle powdered sugar on the top of the cake.
