The marinade for fajitas always includes lime juice or some other acidic liquid to ensure the tenderness of the skirt steak. You can substitute flank steak, beef round or sirloin if you prefer.
Ingredients
- 1 pound boneless beef skirt steak

- For the marinade:
- 1/3 cup fresh lime juice

- 4 cloves garlic, minced

- 2 tablespoons cilantro, rough chopped

- 2 teaspoons worcestershire sauce

- 1 teaspoon red pepper flakes

- 1 teaspoon oregano, dried

- 2 teaspoons cumin

- 1 teaspoon black pepper

- 2 tablespoons cooking oil

- For cooking:
- 8 - 7 inch flour tortillas

- 2 tablespoons cooking oil

- 1 medium onion, thinly sliced and separated into rings

- 1 medium red or yellow bell pepper, seeded and cut into thin strips

- For garnish:
- Salsa, warmed

- Sour cream

- Cheddar cheese, shredded

- 1 medium tomato, chopped
