Ingredients
- 350g/12 ounces rump (round) steak

- 15ml/1 tablespoon vegetable oil

- 300ml/ 1/2 pint/1 1/4 cups beef stock

- 2 garlic cloves, finely chopped

- 1 small carrot, thinly sliced

- 3 celery sticks, sliced

- 15ml/1 tablespoon dry sherry

- 5ml/1 teaspoon caster (superfine) sugar

- 45ml/3 tablespoon oyster sauce

- 5ml/1 teaspoon corn flour (cornstarch)

- 15ml/1 tablespoon cold water

- 4 spring onions (scallions), chopped

- Ground white pepper

- Rice or noodles, to serve
