Ingredients

  • 1 cup whipping cream
  • 1/4 cup beef broth
  • 1/4 teaspoon coarsely ground pepper
  • 1 clove garlic, minced
  • 1 tablespoon whiskey or brandy
  • 4 beef tenderloin steaks, cut 1 1/4 inches thick
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon coarsely ground pepper

Directions

  1. 1. For sauce, in a medium skillet combine whipping cream, beef broth, the 1/4 teaspoon pepper, and garlic.
  2. 2. Bring to a gentle boil. Reduce heat. Simmer, uncovered, about 7 minutes or till the liquid is reduced to 1/2 cup. Stirring occasionally.
  3. 3. Stir in whiskey or brandy. Keep warm.
  4. 4. Meanwhile, trim fat from meat.
  5. 5. Combine Worcestershire sauce and the 1 tablespoon pepper.
  6. 6. Rub mixture evenly onto both sides of steaks.
  7. 7. Grill on the rack of an uncovered grill directly over medium coals to desired doneness, turning once halfway through. (Allow 14 to 18 minutes for medium rare and 18 to 22 minutes for medium.) Serve steaks with sauce. Makes 4 servings.
  8. 8. Indirect Grilling: In a grill with a cover arrange preheated coals around a drip pan. Test for medium heat above the pan. Place steaks on the grill rack over the drip pan. Cover and grill to desired doneness. (Allow 18 to 22 minutes for medium rare and 22 to 26 minutes for medium.)
