Beef Wellington is a preparation of beef tenderloin which is then wrapped in puff pastry and baked.
Ingredients
- 700 g/1 1/2 1b beef fillet, in one piece

- Salt

- Freshly ground black pepper

- 15 g/ 1/2 ounces/1 tablespoon butter or margarine

- 15 ml/1 tablespoon olive oil

- 1 onion, finely chopped

- 100 g/4 ounces button mushrooms, sliced

- 15 ml/1 tablespoon chopped fresh parsley

- 225 g/8 ounces puff pastry (paste), thawed if frozen

- 100 g/4 ounces smooth spreading liver pate

- 1 egg, beaten, to glaze

- Horseradish relish,

- Potatoes and peas, to serve
