Beet Caviar

A Roasted Beet mince eaten as a garnish or a spread


  • 4 fresh beets, washed, roasted, and peeled
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Tabasco sauce to taste
  • Salt and black pepper to taste
  • Chopped fresh parsley leaves for garnish, optional


  1. 1. Roast Beets at 325F for approx. 2 hours or until they give to finger pressure, remove from oven and let cool.
  2. 2. Place the beets, oil, and lemon juice in a food processor.
  3. 3. Pulse until the mixture is finely minced.
  4. 4. Season with Tabasco, salt, and pepper and serve or cover and refrigerate for up to a day.
  5. 5. Garnish with parsley if you like before serving.
