Ingredients

  • Boiled ingredients:
  • 4 ounces butter or margarine
  • 6 ounces dark brown sugar
  • 1/2 cup orange juice
  • 5 tablespoons water
  • 9 ounces dried fruit, chopped and pitted
  • 1 teaspoon baking soda
  • 2 teaspoons apple pie spice
  • Added afterwards:
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 large egg, beaten
  • 2 tablespoons milk

Directions

  1. 1. Grease a 7 inch square cake pan. Cut parchment paper to fit in the base and a strip as wide as the sides and put them in the pan.
  2. 2. Put the boiled ingredients in a saucepan and bring to the boil over high heat. Boil for 3 minutes. Remove from heat and set aside to cool for 5 minutes.
  3. 3. Preheat the oven to 350 degrees F.
  4. 4. Stir the flour, baking powder, egg and milk into the boiled mixture. Pour the batter into the prepared pan.
  5. 5. Bake for about 1 hour 10 minutes or until a skewer inserted in the center comes out clean. Cool for 10 minutes then turn out on to a wire rack. Remove the paper and let the cake cool.
