Directions

1. 1. Put the potatoes in a saucepan and cover with cold water. Add a good pinch of salt.
2. 2. Cover with a lid and bring to the boil over a high heat, continue to boil, for about 10-15 minutes until really tender. Drain thoroughly in a colander.
3. 3. Tip the potatoes into a blender or food processor and add the butter.
4. 4. Run the machine until the mixture is smooth. Serve straight away.
5. 5. Add 5 ml/1 teaspoon garam masala with the butter or margarine.
6. 6. Top the potato with a crumbled, grilled (broiled) piece of Bombay duck (it's not a duck - it's a sort of dried fish!). Serve with any curry, as a change from rice.
