A red coloured soup made of beetroots.
 

Ingredients

  • 2 celery sticks, coarsely grated, discarding the strings
  • 2 carrots, coarsely grated
  • 1 small onion, grated
  • 3 cooked beetroot (red beets), coarsely grated
  • 900 ml/11/2 pts/33/4 cups beef stock, made with 2 stock cubes
  • 15 ml/1 tablespoon red wine vinegar
  • Salt and freshly ground black pepper
  • 60 ml/4 tablespoon soured (dairy sour) cream

Directions

  1. 1. Put the grated vegetables in a saucepan with the stock, vinegar and some salt and pepper.
  2. 2. Heat rapidly until boiling,
  3. 3. Turn down the heat until gently bubbling around the edges, then part- cover the pan with a lid and cook for 20 minutes. Re-season if necessary.
  4. 4. Ladle into warm bowls and top each with a spoonful of soured (dairy sour) cream before serving.
