Ingredients
- 2 celery sticks, coarsely grated, discarding the strings

- 2 carrots, coarsely grated

- 1 small onion, grated

- 3 cooked beetroot (red beets), coarsely grated

- 900 ml/11/2 pts/33/4 cups beef stock, made with 2 stock cubes

- 15 ml/1 tablespoon red wine vinegar

- Salt and freshly ground black pepper

- 60 ml/4 tablespoon soured (dairy sour) cream
