A beef braised in rich peanut sauce.
Ingredients
- 900g/2lb stewing beef, chuck, shin or blade steak

- 30ml/2 tablespoon vegetable oil

- 15ml/l tablespoon annatto seeds, or 5ml/l teaspoon paprika and a pinch of ground turmeric

- 2 onions, chopped

- 2 garlic cloves, crushed

- 275g/ 10 ounces celeriac or swede (rutabaga), peeled and roughly chopped

- 425ml/15 fluid ounces/l 3/4 cups beef stock

- 350g/12 ounces new potatoes, peeled and cut into large dice

- 15ml/l tablespoon fish sauce

- 30ml/2 tablespoon tamarind sauce

- 10ml/2 teaspoon granulated sugar

- 1 bay leaf

- 1 sprig thyme

- 45ml/3 tablespoon long grain rice

- 50g/2 ounces/ 1/3 cup peanuts or 30ml/2 tablespoon peanut butter

- 15ml/1 tablespoon white wine vinegar

- Salt and ground black pepper
