Ingredients
- 350g/12 ounces tofu

- 2.5ml/ 1/2 teaspoon sesame oil

- 10ml/2 teaspoon light soy sauce

- 15ml/l tablespoon vegetable oil

- 2 garlic cloves, finely chopped

- 2.5ml/ 1/2 teaspoon grated fresh root ginger

- 115g/4 ounces/l cup fresh shiitake mushrooms, stalks removed

- 175g/6 ounces/11/2 cups fresh oyster mushrooms

- 115g/4 ounces/l cup drained, canned straw mushrooms

- 115g/4 ounces/l cup button (white) mushrooms, cut in half

- 15ml/1 tablespoon dry sherry

- 15ml/l tablespoon dark soy sauce

- 90ml/6 tablespoon vegetable stock

- 5ml/l teaspoon cornflour (cornstarch)

- 15ml/l tablespoon cold water

- Salt and ground white pepper

- 2 spring onions (scallions), shredded
