A sauce made of loganberries with brandy and sugar.
Ingredients
- 225 g/8 ounces fresh or frozen loganberries
- 45 ml/3 tablespoon brandy
- 15 ml/1 tablespoon water
- Icing (confectioners') sugar, to taste

Directions
- 1. Gently stew the loganberries in the brandy and water for about 8 minutes.
- 2. Puree in a blender or food processor, then tip into a sieve (strainer) over a bowl and rub through with a wooden spoon to remove the seeds.
- 3. Sweeten the puree to taste with sifted icing sugar and serve cold.
