A fabulous spicy cookies made of brandy.
 

Ingredients

  • 1/3 cup/60 g raisins
  • 2 tablespoons brandy
  • 1 1/2 cups/225 g all-purpose/plain flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly grated nutmeg
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3/4 cup/180 g butter, softened
  • 2/3 cup/140 g granulated sugar
  • 1/4 cup/50 g firmly packed dark brown sugar
  • 4 tablespoons milk
  • Grated zest of 1 orange

Directions

  1. 1. Preheat the oven to 350 o F/180°C/gas 4.
  2. 2. Butter two cookie sheets.
  3. 3. Plump the raisins in the brandy in a small bowl for 15 minutes, or until almost all the liquid has been absorbed.
  4. 4. Sift the flour, cinnamon, nutmeg, baking soda, and salt into a medium bowl.
  5. 5. Beat the butter and granulated and brown sugars in a large bowl with an electric mixer at high speed until creamy.
  6. 6. Mix in the milk, raisin mixture, dry ingredients, and orange zest.
  7. 7. Drop teaspoons of the dough 1 inch (2.5 cm) apart onto the prepared cookie sheets.
  8. 8. Bake for 10-15 minutes, or until just golden.
  9. 9. Cool on the sheets until the cookies firm slightly.
  10. 10. Transfer to racks to finish cooling.
