The wine sauce in this breaded lamb chops recipe is very easy to make. The pan is deglazed with the wine which is then reduced and finished with butter.
Ingredients
- 8 lamb chops or cutlets (or 12 medallions)

- 3 tablespoons extra virgin olive oil

- 1 teaspoon ground cumin, plus more to taste

- 1 tablespoon fresh thyme, chopped

- 2 garlic cloves, peeled and crushed

- 2 eggs, lightly beaten

- Bread crumbs (preferably panko) for dredging

- Salt and black pepper to taste

- 1/2 cup dry white wine

- 1 tablespoon unsalted butter

- Fresh parsley leaves, chopped for garnish

- 2 lemons, cut into wedges for serving
