1. 1. Select figs of uniform size and ripeness. Add soda to boiling water and pour over unpeeled figs.
2. 2. Let stand 5 to 10 minutes, depending on thickness of skins, when skins become slightly transparent, remove to a bath of cold water and rinse thoroughly.
3. 3. Combine honey and water and heat to boiling.
4. 4. Add figs and simmer until figs can be pierced with a straw and the skins look clear and translucent.
5. 5. Pack in sterile jars; fill with hot sirup. One slice lemon and 1 slice orange may be added to each jar.
6. 6. Adjust rings and covers. Process 25 minutes in hot water bath.
