A recipe made of brinjal with coconut milk.
Ingredients
- 1/2 kg medium purple brinjal

- 1 cup grated coconut

- 4 green chillies, slit

- 1/2 teaspoon turmeric powder

- 4 tablespoon ghee or refined oil

- Salt to taste

- Seasoning:
- 2 bay leaves

- 3 cloves

- 2 small piece cinnamon sticks

- 2 large cardamoms.

- Chop fine:
- 2 medium onions

- 2 medium tomatoes

- A handful of coriander leaves

- Grind to paste:
- 6-8 cloves garlic

- 1" piece ginger

- Garnish:
- 2 tablespoon chopped coriander leaves
