- 1 pair sweetbreads
- Salt
- Paprika
- Flour
- 4 strips bacon
- Stock from cooking sweetbreads
- Sherry or lemon juice
- Butter

Directions
- 1. Prepare sweetbreads as above, but dot with butter and broil under moderate heat about 10 minutes, or until bacon is crisp.
- 2. Baste occasionally with drippings. Flavor drippings with sherry and serve over sweetbreads
