1. 1. *Note: There is no need to buy buttermilk if you don’t regularly use it. Put 2/3 of a tablespoon of white vinegar in a measuring cup. Add regular milk (2 percent is fine) until the measurement reaches the 2/3 cup level. Stir well and let stand at room temperature for 5 to 10 minutes then add it as you would buttermilk. The acid in the vinegar causes the fat solids in the milk to form curds, similar to buttermilk. This substitute replicates the flavor but not the texture so there are some recipes that this will not work in.
2. 2. For lemon chess pie omit vanilla and add 1/4 cup lemon juice. For chocolate chess pie add 3 1/2 tablespoons cocoa to the sugar and flour mix.
3. 3. Preheat oven to 350 degrees F.
4. 4. In a large bowl, combine sugar and flour. Stir in the eggs, buttermilk and corn meal until blended. Stir in the melted butter and vanilla. Pour filling into the pie crust.
5. 5. Bake 45 minutes or until filling is set.
