Buttermilk Panna Cotta

Directions
- 1. Put 1/2 cup of the buttermilk in a medium saucepan with a lid and sprinkle the gelatin over it; let sit for 5 minutes. Turn the heat to low and cook, stirring, until the gelatin dissolves completely.
- 2. Cut the vanilla bean in half lengthwise. Scrape out the seeds and add both seeds and pod to the pot along with all the remaining ingredients.
- 3. Cook over medium heat, stirring, until steam arises from the pot, 5 to 10 minutes. Turn off the heat, cover, and steep for 15 to 30 minutes.
- 4. Remove the vanilla pod and pour the mixture into 4 large or 6 small custard cups. Chill until set, about 4 hours. Serve in the cups or dip the cups in hot water for about 10 seconds each, then invert onto plates.
- 5. Serve within 24 hours of making it.
