Butterscotch Icing

This icing has a deep, rich flavor that goes well with many different types of cake.
 

Ingredients

  • 1 cup brown sugar
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1 tablespoon light corn syrup
  • 1/4 cup shortening
  • 1/4 teaspoon salt
  • 2 cups confectioner's sugar, sifted
  • 3 tablespoons milk, heated

Directions

  1. 1. Mix the brown sugar, butter, milk and corn syrup in a sauce pot and place over medium high heat. Stir constantly after the mixture begins to boil.
  2. 2. Using a candy thermometer bring the liquid up to 250 degrees F or until a small ball forms when dropped into cold water, remove from heat and set aside.
  3. 3. In a mixing bowl combine shortening and salt then add sugar gradually until fully creamed. Add hot milk then add hot butterscotch mixture gradually and beat until smooth and thick enough to spread.
