Ingredients
- For the crawfish seasoning mixture:

- 1 teaspoon sugar

- 1 teaspoon freshly ground black pepper

- 2 pounds partially cooked, shelled crawfish or small shrimp

- 1 quart vegetable oil

- For the coating:
- 2 cups flour

- 1/2 cup finely ground cornmeal

- 2 tablespoons sweet paprika

- 2 teaspoons dried oregano

- 2 teaspoons sugar

- 2 teaspoons garlic powder
