    Shrimp are as delicate as eggs when it comes to cooking time. When they are overcooked they have a tough and rubbery texture. When they just start to turn pink remove them from the heat.

Wow! this cajun shrimp creole recipe was great. And it's so easy to prepare and goes so well with rice. Personally I would prefer it to be a bit more spicy, but again that's just me.
