A potato soup with spinach.
 

Ingredients

  • 3 large potatoes, boiled
  • 1 tablespoon oil
  • 1 large onion, cut fine
  • 6 cloves garlic, cut fine
  • 3 cups of meat or vegetable stock
  • Salt and pepper to taste
  • 2 cups spinach, finely cut

Directions

  1. 1. Wash and sieve the potatoes. Heat the oil in a pan on medium flame and saute onion and garlic, till golden brown in colour.
  2. 2. To this add the stock, sieved potatoes, salt and pepper. Lastly, add the spinach.
  3. 3. Stir cook gently till well done, for about 10 mins.
  4. 4. Serve hot with a knob of butter and a sprinkling of grated nutmeg.
