Ingredients
- 225g/8 ounces lean beef steak or pork fillet (tenderloin)

- 225g/8 ounces can bamboo shoots, drained

- 1 leek, trimmed

- 25g/1 ounce chinese dried mushrooms, soaked for 30 minutes in 120ml/

- 4 fluid ounces/ 1/2 cup warm water

- 150g/5 ounces chinese leaves (chinese cabbage)

- 450g/1 lb cooked egg noodles (255g/8 ounces dried), drained well

- 90ml/6 tablespoon vegetable oil

- 30ml/2 tablespoon dark soy sauce

- 15ml/l tablespoon cornflour (cornstarch)

- 15ml/l tablespoon rice wine or dry sherry

- 5ml/l teaspoon sesame oil

- 5ml/l teaspoon caster (superfine) sugar

- Salt and ground black pepper
