Ingredients

• 1 cup white sugar
• 6 eggs
• 1 3/4 cups buttermilk (* see below)
• 1 (14 ounce) can condensed milk
• 1/2 teaspoon vanilla extract
• A pinch of salt

Directions

1. 1. Preheat oven to 350 degrees F.
2. 2. In a heavy skillet over medium low heat cook and stir sugar until it melts and turns a light brown. Immediately pour it into a 9 inch round baking dish (a deep pie pan is fine). Tilt the dish to coat the bottom completely.
3. 3. *Note: If you do not have buttermilk you can make this substitution - put 1 3/4 tablespoons white vinegar into a large measuring cup. Pour in milk (whole or 2 percent) until the liquid reaches 1 3/4 cups. Stir completely and let sit at room temperature for 10 minutes. Stir again and use in place of the buttermilk.
4. 4. Beat the eggs in a mixing bowl until the yolks and whites are completely mixed together. Stir in the buttermilk, condensed milk, vanilla and salt until smooth. Pour into baking dish over caramel layer.
5. 5. Take a roasting dish that the pie pan will fit into and line the bottom with a damp dish towel. Place the baking dish on towel inside roasting pan. Open oven door and place roasting pan on oven rack or oven door. Fill the roasting pan with cold tap water to reach halfway up the sides of the baking dish.
6. 6. Bake for 1 hour or until center is set (the center will still be a little jiggly).
7. 7. Carefully remove the roasting pan from the oven and then transfer the baking dish to a wire rack to cool for one hour.
8. 8. Run a knife around the edge of the dish and invert the flan onto a serving platter.
