Directions

1. 1. Wash, scrape the carrots and cut them into small pieces.
2. 2. Boil the carrot pieces in one litre milk till tender.
3. 3. When cool, blend in a mixie to a fine paste.
4. 4. Concentrate the remaining milk.To 1/3 of the quantity.
5. 5. Add sugar and boil well (2 or 3 tablespoon of condensed milk can be added)
6. 6. When it is slightly cool put butter to melt.
7. 7. Add a few drops of ice-cream essence, add the blended carrot pulp and mix well.
8. 8. Keep inside the freezer in a closed Aluminium vessel, kept over a polythene cover for 2 hrs.
9. 9. Remove from the freezer after 2 hrs. Blend in a mixie again keep back in the freezer.
10. 10. Repeat the process two more times after one hour to get good results.
11. 11. Mix with the chopped nuts and spread a few on top.
12. 12. In the end keep for 3 hrs continuously or till set (in the freezer)
