With this almost homemade - super easy - carrot molasses cookie recipe you don't have to shred carrots by hand to get the great flavors of these homey, old fashioned cookies.
 

Ingredients

  • 1 package carrot cake mix
  • 1/4 cup butter, softened
  • 2 tablespoons light molasses
  • 2 eggs
  • 1/2 cup chopped nuts
  • 1 tub cream cheese ready to spread frosting

Directions

  1. 1. Beat half of the dry cake mix with the butter, molasses and eggs in a large bowl with electric mixer on medium speed until smooth. Stir in remaining cake mix and the nuts. Refrigerate about 2 hours or until chilled.
  2. 2. Preheat oven to 375 degrees F. Lightly grease a cookie sheet.
  3. 3. Drop dough by rounded teaspoonfuls about two inches apart onto cookie sheet. Bake for eight to ten minutes or until edges are set, centers will be soft.
  4. 4. Transfer from cookie sheet to wire rack. Let cool completely.
  5. 5. Top with ready to spread frosting. Cover and refrigerate any remaining frosting.
