A Thai style soup made of cellophane noodles.
Ingredients
- 4 large dried shiitake mushrooms

- 15 g/ 1/2 ounces dried lily buds

- 1/2 cucumber, coarsely chopped

- 2 garlic cloves, halved

- 90g/3 1/2 ounces white cabbage, chopped

- 1.2 litres/2 pints/5 cups boiling water

- 115g/4 ounces cellophane noodles

- 30 ml/2 tablespoon soy sauce

- 15ml/1 tablespoon palm sugar or light muscovado (brown) sugar

- 90g/3 1/2 ounces block silken tofu, diced

- Fresh coriander (cilantro) leaves, to garnish
