According to the Mexican Spanish dictionary chalupa means "boat." In Mexican cuisine it is, essentially, a tostada platter.
 

Ingredients

  • Vegetable oil
  • 12 - 6 inch corn tortillas
  • 3 cups refried beans
  • 1/2 medium onion, small dice
  • 1/2 pound cheddar cheese, grated
  • 3 cups lettuce, shredded
  • 1 large tomato, chopped

Directions

  1. 1. Pour oil 1/2 inch deep in a 10 inch cast iron skillet over medium high heat (7 on a scale of 10).
  2. 2. Test the oil for proper temperature by putting in a small piece of tortilla. It is up to temperature when the oil immediately bubbles. Be sure to get the oil up to full temperature before you start cooking in order to get crisp shells.
  3. 3. Turn the oven on to warm.
  4. 4. Fry tortillas completely flat on both sides until very crisp. Drain and keep warm on a cookie sheet covered with paper towels in the oven.
  5. 5. Spread about 1/4 inch thick layer of refried beans on each fried tortilla. Top with onion and a generous amount of cheese.
  6. 6. Place assembled chalupas on a cookie sheet and place under broiler until cheese melts. Watch them carefully during this step, they can burn quickly.
  7. 7. Top with shredded lettuce and tomato; serve.

    Chalupas are a specialty of the south central Mexico states of Puebla, Guerrero and Oaxaca. Curiously, in most cases in Mexico it is referred to as plural even if you only have one.
