This is a popular and classic Korean noodle recipe.
Ingredients
- 225g/8 ounces rump (round) or sirloin steak

- 115g/4 ounces cellophane noodles, soaked for 20 minutes in hot water to cover

- 4 chinese dried mushrooms, soaked for 30 minutes in warm water

- Groundnut (peanut) oil, for stir-frying

- 2 eggs, separated

- 1 carrot, cut into matchsticks

- 1 onion, sliced

- 2 courgettes (zucchini) or 1/2 cucumber, cut into sticks

- 1/2 red (bell) pepper, seeded and cut into strips

- 4 button mushrooms, sliced

- 75g/3 ounces/ 1 1/2 cups beansprouts. washed and drained

- 15ml/l tablespoon light soy sauce

- Salt and ground black pepper

- Sliced spring onions (scallions) and sesame seeds, to garnish
