Here's a tasty variation on Welsh rarebit. Diced tomatoes are added to the cheese sauce to give the flavor another dimension of sweetness.
 

Ingredients

  • 1 cup beer (or milk)
  • 1 tablespoon butter
  • Salt and cayenne pepper to taste
  • 2 cups american (or cheddar) cheese, shredded
  • 1 cup bread crumbs
  • 1 cup canned diced tomatoes
  • Toast or bread croustades (bread bowls)

Directions

  1. 1. Heat the beer to simmer over medium heat, add the butter and stir to incorporate.
  2. 2. Add the salt, cayenne pepper and cheese, a little at a time, stirring constantly until the cheese is melted and the sauce is smooth.
  3. 3. Add the bread crumbs and tomatoes, stir to combine. Remove from heat.
  4. 4. Serve on toast or bread croustades.
