Directions

1. 1. Preheat the oven to 220°C/425°F/ gas mark 7. Lightly grease a baking (cookie) sheet.
2. 2. Sift the flour, soda, cream of tartar and salt into a bowl.
3. 3. Add the butter or margarine and mash into the flour with a fork until crumbly.
4. 4. Stir in the milk to form a soft but not sticky dough.
5. 5. Dust your hands with flour and draw the dough together, then shape into a ball.
6. 6. Place the ball on the baking sheet, flatten slightly and cut a cross in the top of the dough to mark it in quarters.
7. 7. Bake in the oven for 20-25 minutes until golden and risen and the base sounds hollow when the loaf is lifted (wear an oven glove) and tapped with your knuckles. Cool on a wire rack.
8. 8. To serve, break into quarters, then thickly slice and spread with butter or margarine.
9. 9. Add 100 g/4 ounces/1 cup Cheddar cheese, grated, and 5 ml/1 teaspoon mustard powder to the dry ingredients before mixing in the milk.
