1. 1. Preheat oven to 325 degrees F.
2. 2. Make sure the cream cheese and eggs are at room temperature. Spray a spring form pan with cooking spray and line the lower seam with parchment paper.
3. 3. In a large bowl mix eggs, cream, sugar and vanilla. Add cream cheese in 2 ounce chunks for easier beating. After all the lumps are gone pour it into the pan.
4. 4. Bake for 55 to 60 minutes. Cheesecake needs to bake slowly and evenly to prevent cracking.
5. 5. Cool on a rack and refrigerate overnight. Before serving you can add whipped topping, strawberries or any other topping that appeals to you.
