Chicken Giblet Gravy

Contrary to what some people think, chicken giblets aren't just for dog or cat food. This recipe for giblet gravy goes almost as far back as people have been eating chickens.
 

Ingredients

  • Chicken liver, heart and gizzard
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 tablespoons flour
  • 4 tablespoons chicken drippings
  • 3 cups reserved cooking liquid (can substitute cream or milk for part of this)

Directions

  1. 1. Wash liver, heart and cleaned gizzard. Cover gizzard and heart with four cups of cold water, add salt and pepper and let simmer for 20 minutes.
  2. 2. Add liver and cook for another 10 minutes or until tender.
  3. 3. Remove the giblets and reserve the liquid they were cooked in. Chop the giblets into small pieces, reserve.
  4. 4. Brown the flour in the chicken drippings, stirring constantly. Add the cooking liquid, stirring constantly. Cream or milk may be used for part of the stock. Cook for about five minutes.
  5. 5. Add the chopped giblets and stir to combine.
